Creamy Parmesan Spinach Dip

Yes I know, suddenly there is a recipe overload popping up here lol!  I'm finally posting all the recipes I've tried in the past 6 or 8 months since I last posted.  They're all new so enjoy!

Ingredients:
  • 10 oz frozen chopped spinach, thawed and excess liquid squeezed out
  • 1/2 cup light sour cream
  • 5 tbsp light mayonnaise
  • 1/3 cup Parmigiano Reggiano*
  • 1/4 cup scallion, chopped
  • fresh pepper to taste
Directions:
Combine all the ingredients in a medium bowl. Can be made one day in advance and stored in the refrigerator. Remove from refrigerator 30 minutes before serving. Makes about 2 cups.

*I read up on the comments on this recipe and found quite a few readers used shredded Parmesan Cheese instead of Parmigiano Reggiano, which is quite expensive and not easy to find.  I used an Italian Mix package of Shredded Cheese, which worked out just great it was delicious!
