Clam Chowder

Ingredients:

8-10 potatoes
2 cups grated carrots
2 cans minced clams
1 cube butter
1/2 cup chopped onions
3/4 cup flour
1 pint half and half
salt to taste

Directions:

Dice potatoes into a large frying pan, add grated carrots, drain juice off of minced clams over the potatoes and carrots, fill pan with water to cover potatoes, add salt to taste, cover and boil until tender.

Melt butter in large cooking pot, add onions and saute until just soft. Turn heat down and add flour slowly, it will be thick, add half and half, mix well with wire wisk to break up any clumps. Cook over low heat until desired thickness. Add potatoes and carrots to cooking pot, mix well, add clams and heat completely through, add more salt if needed. Serve hot with saltine crackers or in bread bowls.
