What's For Dinner? The most dreaded question asked around here!

Zucchini Brownies

Delicious! Definitely a must try!

Brownies:

2 Cups Zuccini peeled* and shredded
2 Cups sifted flour
1 1/4 Cup Sugar
1 Tsp Salt
1 1/2 Tsp. Baking Soda
1/2 Cup Cocoa
1/2 Cup Vegetable Oil
2 Tsp Vanilla
1/2 to 1 Cup Walnuts**

Mix zucchini oil and vanilla, set aside. Sift dry ingredients and add to Zucchini mix. Do not beat. Chop nuts and add**. Pour into 9x13 inch greased pan. Bake 30 minutes at 350 degrees. Please note batter will be very thick.

Easy Chocolate Icing:

3 TBSP Cocoa
3 TBSP Butter or Margarine
1 TBSP Shortening

Melt in a small saucepan and set aside.

In a small bowl combine:
1 Cup Powdered Sugar
1/8 Cup Milk
1/4 Tsp Vanilla

Add to previously heated ingredients. Spread icing on brownies and top with more chopped nuts if desired.

*Zucchini does not NEED to be peeled, just shred skins and all if desired.
**Walnuts are optional.
