Taquito Mess

Sorry, no picture. This post is being completed in a hurry before: a. my Firefox crashes again (for the umpteenth time today!) b. I go get my baby up to feed him and play after a good little morning nap and c. I get to work making my millions of phone calls needed to be taken care of by 4pm today!

10 Frozen Beef or Chicken Taquitos
1 Can Pinto Beans
1 Cup uncooked Minute Rice^^
1 Cup Green Chile Enchilada Sauce (more may be added if desired)
Shredded Mozzarella Cheese

Cook Minute Rice according to the directions on the box. Heat Taquitos in the microwave according to the directions on the box. Pour Pinto Beans into a 8x8 baking dish, sprinkle with Mozzarella Cheese, top with cooked Rice, layer Taquitos on top, pour Green Chile Enchilada Sauce over top and sprinkle with desired amount of Mozzarella Cheese. Bake 375 degrees for 10 minutes or until sauce and beans are heated through and cheese is melted.

^^You can use any rice, I use Minute Rice to make it a much quicker recipe, and because I am completely hopeless when it comes to making rice, lol!
