My sister-in-law suggested I try at least 1 recipe a week using only food storage items for practice. My mother-in-law gave all of us a cookbook called "Cooking from My Pantry" for Christmas one year so I've decided to try out a recipe every once in a while, it most likely won't be once a week but you'll see one posted here and there for sure.
Tonight's recipe is from "Cooking from My Pantry," though I did change some things according to what I had on hand and what I didn't have.
1 TBSP Oil
1 Can Ground Beef, drained and rinsed (I used 1 pound frozen ground beef)
1 tsp Dry Onion
1 TBSP Flour
1 6 oz Can Tomato Paste
1 tsp Salt
1 tsp Chili Powder
1/8 tsp Pepper
1 Cup Cubed Cheddar Cheese ^^^
1/2 Cup Sliced Olives
1 Recipe for Corn Bread (or a box mix if you want to cheat, it's what I did)
In frying pan add oil, onions and ground beef, heat until onions are soft (or if using frozen ground beef, brown the beef thoroughly).
Stir in Flour.
Add Tomato Paste, Salt, Chili Powder, Pepper.
Remove from heat and add Olives and Cheese. Pour into Square baking dish.
Top with Corn Bread batter.
Bake 400 degrees for 30-40 minutes.
Let stand 5 minutes and serve.
Family Rating **** (Husband said it was pretty good for being from food storage)
Reheat Rating---Can't rate this one, we didn't have any left overs.
^^^The cookbook had suggestions for food storage cooking:
1. Use canned cheese.
2. Use Velvetta (Shelf Stable)
3. Use bottled cheese spread.
4. Use powdered cheese.
5. Leave cheese out, even though cheese is very good in recipes many dishes are very good without cheese, if you don't have cheese try cooking without it!
6. Homemade cheese made from powdered milk.
