What's For Dinner? The most dreaded question asked around here!

I will be putting all these recipes plus photos in my own cookbook made on www.heritagemakers.com/LaCee I'm excited to have a family cookbook around here to flip through quickly for dinner ideas! I'll post as often as my crazy, busy life will allow.

Creative Enchiladas

Wheat Tortillas
1 can Chicken or 1 pound browned ground beef
1 packaged Knorr Rice Sides Spanish Rice
1 cup frozen corn or 1 can canned corn
1 can Black beans or Pinto beans
1 can sliced olives
1 can Red Enchilada Sauce
2 cups shredded Mozzarella Cheese

Combine the first 5 ingredients in a bowl, spoon onto tortillas and add a bit of cheese and a bit of enchilada sauce, roll up tight and place in greased casserole dish.  Pour remaining sauce over top of enchilada's and top with cheese, cover and bake 350 degrees 20-30 minutes or until hot and bubbling.
