Ok, I admit my life is kind of crazy, especially lately! I recently rented a Vendor Booth at a local boutique and I've been crazy trying to get an inventory together before the first of February. I'm hoping this booth will help further promote my at home business as well as bring in some much needed extra income. Needless to say, my family misses me. I haven't been very good at getting meals prepared at a decent time each night, sometimes I don't prepare one at all. My wonderful husband has been picking up the slack and coming right home ready to cook, but he doesn't usually stick to our 1 week menu plans, therefore we end up eating the same things over and over and worst of all he's making extra trips to the grocery store for ingredients.
This week a light bulb clicked in my head, and it was BRIGHT! My best time of the day to get things done is in the morning, after the kids and I are ready for the day and everyone has been fed. I usually take this time to clean up the house a bit and then get some things done for my business.
As of this morning I've decided to be WAY more diligent at staying up after Miss K's 6:00am feeding, I can get all my business stuff done then. This leaves me with more time after everyone is ready for the day. My new plan? I'll clean up the house like usual and then begin to prepare that evening's meal. Today it was AWESOME! We had Spinach Cheese Manicotti, I was able to completely prepare it up until the baking part. Come 4:00pm all I had to do was pop it in the oven and it was ready to eat by 5:00pm! Just in time for my sweet husband to get home from work.
It was nice, nice enough to suggest to everyone out there who actually reads this blog to not be afraid of preparing your evening meals whenever you have time in the day, even if it is at 9:00am! Or maybe it's earlier for some of you? Who cares! It's the best feeling ever to be able to spend time with the kids and get other important things done knowing you don't have to quit at 3 or 4 to prepare dinner! Love it!
